Carrot Cake Recipe


·         400gms sugar
·         250gms cooking oil
·         3 big eggs, not refrigerated
·         1 tsp vanilla
·         450g baking flour
·         2 tsp crushed cinnamon
·         ¼ tsp nutmeg
·         2 tsp baking soda
·         1¼ tsp salt
·         200gms raisins
·         200gms walnuts (sliced)
·         450gms carrots (grated)


1.       Pre-heat the oven to 300 degrees F.
2.       Prepare 2 – 8inc baking pans (round)
3.       Mix the eggs, sugar, vanilla, and oil in a bowl and beat until its yellowish
4.       Take another bowl and sift flour, add nutmeg, baking soda, salt, and cinnamon.
5.       Start mixing with a mixer at a speed that is low as you continue adding the dry ingredients.
6.       Once the mixture is ready, remove the mixer and fold nuts, raisins, and carrots.
7.       In the 2 – 8inc baking pans pour the batter in equal amounts.
8.       Place the pans in the oven and bake for 1 hour
9.       Let the cakes cool on a wire rack completely.
10.   Use the cream cheese frosting to cover the cakes.
