Mini Cheesecakes Recipe

A simple and pleasant Mini Cheesecake that is ideal for weddings, celebrations, and any other occasion!


2 tbsp lemon juice
12 vanilla wafers
140 gm sugar
2 eggs
2x225 gm packets softened cream cheese
600 gm cherry pie filling


·         Preheat oven to 350 degrees F.
·         Take 12 paper baking cups and line muffin tins with them. In each cup, place a vanilla wafer.
·         Take a small bowl and beat the cream cheese until it becomes fluffy, and then add sugar, lemon juice and the eggs. Beat using a hand mixer until the mixture becomes smooth and fully combined.
·         In each baking cup, pour the cream cheese mixture until the cup is 2/3 full.

·         Place the cups in the preheated oven and bake for 17 to 20 minutes. Remove and place on a rack to cool. Use the fruit pie filling for topping.
