Pineapple Banana Cake with Coconut Frosting

Pineapple banana cake is quite moist and the frosting makes it even moister.  It makes a fantastic dessert for your family and visitors too.  I love to eat it in the morning with coffee. It’s superb for any celebration, as well.


2 1/2 cups baking flour
1 cup sugar
2 tspns baking powder
2 tspns vanilla
1 1/2 tspns cinnamon (ground)
1 can crushed pineapple
1/2 cup, melted butter
3 big eggs
3 bananas, peeled and cut into tiny pieces  


·         Preheat oven to 350 degrees. Take the flour, cinnamon baking powder, and sugar and mix together in a big bowl using a mixer.
·         Take the pineapple and add vanilla, eggs and the melted butter and mix thoroughly. Add the banana pieces to the pineapple mixture and beat thoroughly.
·         Add this mixture to the dry ingredients and ensure that it is mixed properly. Pour the mixture in a 9 inch baking pan and bake for 45 minutes or until a toothpick comes out clean.

Coconut Frosting

1 stick butter
3/4 cup sugar
1 can milk
3-4 cups coconut
1 cup nuts (your preferred type)

·         Mix sugar, milk, and coconut together and boil. Keep stirring to avoid burning.  Boil for around 5 minutes until it thickens.  Remove from stove and add the nuts. 
·         Leave to stand for about 10 minutes before pouring on the cake.
