White Forest Cake Recipe



2 cups baking flour
2 tsp baking powder
1 1/3 cups sugar
12 tbsp unsalted butter
Pinch of salt
6 egg whites
2 teaspoons vanilla extract
3/4 cup butter milk
12 oz. frozen cherries, thawed


1/2 cup unsalted butter
3 cups powdered sugar
3 tbsp grenadine syrup
1 tbsp whole milk

White Chocolate Ganache:

12 oz. white chocolate
3/4 cups heavy cream


·         Preheat oven to 350ºF. In a mixing bowl, add together butter and sugar and using a hand mixer beat until light and fluffy.
·         In a medium bowl, mix together flour, salt and baking powder. In a small bowl, mix together milk, vanilla and egg whites.
·         To the creamed butter, add at least 1/3 of the dry ingredients, and mix together at a low speed, adding half of the damp ingredients. Add the remaining dry ingredients, followed by the rest of the wet ingredients. Beat until the batter is smooth and combined completely.
·         Pour the batter to two 9-inch cake baking tins that have been buttered and floured. You can line the bottom of pans with parchment paper for easy cake removal.
·         Bake for 25-30 minutes at 350ºF until brown and a toothpick comes out clean. Remove cakes from oven and leave to cool completely on wire racks.

For Ganache:

·         Heat the cream thoroughly and pour over chocolate chips. Leave to sit for 5-10 minutes until the chocolate is totally melted. Whip together until smooth. Leave chocolate to cool to room temperature and then pour into a hand mixer and whisk the ganache until it almost doubles in volume.

For cherry frosting:

·         Whisk with a hand mixer or with a stand mixer until fluffy and light. Gradually add in grenadine and milk. Then, add in powdered sugar in 1 cup lots until frosting is light, but firm and holds its shape.

·         To compile the cake, place one cake on a cake plate. Top with cherry frosting filling and half of the softened and drained cherries. Place the second cake on top, after that; spread the white chocolate ganache uniformly over the cake. Place on top the rest of the fresh cherries. Enjoy!
