Tantalizing Caramel Apple Cake Recipe

Caramel is for keeps. It transforms desserts into heavenly tastes. The good news is that you can make caramel at home! Today combine caramel with apples and bake a cake that leaves you yearning for another bite.

Caramel Apple Cake


3 cups baking flour
1 tsp baking soda
1½ cups vegetable oil
1½ cup white sugar
3 eggs
½ cup brown sugar
2 tsp cinnamon powder
½ tsp salt
½ tsp ground nutmeg
2 tsp vanilla extract
3½ cups chopped and diced apples
1 cup chopped walnuts
 1 cup extremely ripe mashed bananas

For the Caramel Icing


¼ cup butter or margarine
1/3 cup light cream
½ cup brown sugar
Chopped walnuts
A pinch of salt
1 cup confectioner’s sugar


·         Preheat the oven to 350 degrees F. Grease and flour a 10-inch baking pan.
·         Mix the oil and sugars. Add eggs one by one beating well after each addition.
·         Combine the dry ingredients together, add to the butter and beat thoroughly. Fold in walnuts, apples and vanilla.
·         Pour into the pan and bake at 345 degrees F for 11/2 hours or until a toothpick comes out clean.
·         Leave the cake to cool in the pan for about 10 minutes and then remove to cool completely on a wire rack.

Caramel Icing

·         At the top of a double boiler over simmering water, heat cream, brown sugar, salt and butter until the sugar is dissolved completely.  
·         Cool to room temperature.
·         Add in the confectioners’ sugar and beat until smooth.
·         Drizzle over the caramel cake and sprinkle walnuts if desired.
